BEKYA Egyptian Falafel Recipe

BEKYA share their famous Egyptian Falafel recipe! So what makes these Falafels so special? Egyptian Falafels are made with fava beans, making them far lighter than the Falafel’s made from chickpeas elsewhere in the Middle East. We recommend pair them with tahini sauce to serve.

INGREDIENTS
Split fava beans 500g
Cumin ground 3g
Coriander ground 3g
Salt 10g
White pepper 5g
Fresh garlic (diced) 20g
Spanish onion (diced) 50g
Extra virgin olive oil 100ml
Fresh coriander 1 bunch
Fresh parsley 1 bunch
Fresh mint 1 bunch
Fresh dill 1 bunch

METHOD

– Soak the fava beans overnight.

– The next day, strain the fava beans and place it in a food processor with the rest of the ingredients and blend until a paste consistency, and refrigerate overnight.

– The next day remove the fava beans mixture from the fridge.

– With a falafel mould or by hand make the falafel patties and deep fry it at 170c for about 3 to 4 minutes or until golden colour.

– Serve with tahini sauce.
